French Toast

Two versions here: both yummy, I’m sure. One needs flax meal and one needs tofu.

Alison’s version

Quantities are for 4 slices.

Mix 2 tspn flax meal in about 1/3 cup of water. Whisk with egg whisk.

Separately, mix 2 tspn soy protein powder in enough water to make a milky consistency.

Mix the mixtures together. Add enough soy milk to make a normal French Toast consistency (maybe about a cup?).

Cut crusts off wholemeal bread. Soak. Shallow fry in Nuttelex.

You can serve it with salt and pepper for savoury french toast, or with sliced banana, strawberries and maple syrup for sweet.
